Air Fryer Baked Sweet Potatoes

Baked sweet potatoes in the air fryer make a delicious and mess free side dish! These potatoes are tender on the inside and crispy on the outside. Top them with some ghee and garlic to pair with your favorite Whole30 dinner or add some cinnamon and honey for a nutritious paleo dessert!

Ingredients

  • 4 small Sweet Potatoes or 2 large
  • 1-2 Tbsp Olive Oil or Avocado Oil
  • 1 tsp Sea Salt

Instructions

  • Scrub and rinse the sweet potatoes to remove any dirt and then dry.
  • Using a small knife pierce the sweet potatoes 8ish times each all over.
  • Drizzle the oil all over the potatoes and using your hands rub to ensure they are completely coated.
  • Sprinkle with salt and place them in the air fryer basket.
  • Air fry for 35-45 minutes (this entirely depends on the size of the potatoes) at 400F or until fork tender.
  • Remove potatoes, allow to cool, and top with your desired toppings!

Notes

  • Any type of sweet potatoes will work for this recipe, but I highly recommend giving Japanese sweet potatoes a try!
  • Make sure your sweet potatoes are similar in size and thickness to ensure they cook evenly.
  • You can store these baked sweet potatoes in the fridge for up to 4-5 days.  Let them cool and place them in a ziploc bag or airtight container.
  • To reheat these potatoes you can microwave them until warm or place back in the air fryer at 350F for 10-15 minutes until heated thoroughly.
