Pineapple Mojito Mocktail (Paleo, Whole30)

This Pineapple Mojito Mocktail is paleo and Whole30 compatible and makes the perfect healthy and refreshing summertime drink! It is naturally sweetened with fresh and delicious ingredients!

Ingredients
  

  • 6 Mint Leaves
  • 1 Lime Juiced
  • ¾ cup Pineapple Juice
  • 1-2 tbsp Pure Maple Syrup omit for Whole30
  • 1 cup Sparkling Water

Instructions
 

  • Place the mint leaves and lime juice in a glass or cocktail shaker and gently muddle using the end of a wooden spoon.
  • Add the pineapple juice and maple syrup (if using) and gently mix to combine.
  • Fill two glasses with ice, then evenly pour the pineapple juice mixture over the top. (I prefer to pour through a strainer to remove the mint leaves)
  • Top with sparkling water and garnish with additional mint, lime, and pineapple if desired.
